Coconut Fried Rice

Ingredients:

  • Basmati Rice
  • can of coconut milk
  • A bag of your favourite frozen vegetables
  • 500 grams of bacon
  • 6 eggs
  • oyster sauce
  • soy sauce
  • Chicken stock

 

Procedure:

In a microwave safe bowl measure 1.5 cup of rice and 1 can of coconut milk and 1 cup of chicken stock. Stir together and place in microwave for 7-8 mins with no lid. This gives you time to chop up the bacon and whisk some eggs. Remove from microwave and  stir several times and then Cook for a further 7-8 mins. Remove from microwave and mix through with a spoon and then let sit whilst you cook the bacon, vegetables and eggs.

Now, In a fry pan cook off the bacon until delicious then add in a bag of frozen vegetables. Add your desired amount of oyster and soy sauce and let it all cook until ready. If you need some more moisture add in a little chicken stock.   Once cooked and ready pour over the cooked rice and let sit for a few minutes, then stir it all together.

Now, Use the fry pan to cook some scrambled eggs. Mix the eggs with some milk and whisk and pour into fry pan.   Mix into the fired rice and it is ready to eat. Delicious!

This recipe is quick and easy to make and the whole family will love it. Choose vegetables that you like and enjoy. This is an easy meal prep idea for your busy week. It does not take a great deal of time to cook and it keeps really well in the fridge.  Fried Rice and some grilled chicken. A great meal for anytime of the day.
